Sodium benzoate is white pellet mostly , nothing smelly ,has tiny benzoin smell , taste is tiny sweet, sodium benzoate difficult to dissolve in water at normal temperature , tiny volatility in air (especially hot air) , has hygroscopic property ,dissolve in hot water, and also dissolve in ethanol , chloroform and non-volatility oil. Sodium benzoate is also the acidity aseptic, without sterilize, restrain bacterial effect at alkalescent medium; it's antiseptic capability is the best. Sodium benzoate easy to dissolve in oil, easy to penetrate cytomembrane enter the cellular inner, disturb the cytomembrane penetrability, restrain the cytomembrane absorb amino acid; enter cellular inner to ionization and acidification cellular alkali reserves, restrains cellular breath enzyme system activity , prevent acetophenetidin coferment A condensation reaction , thereby to antiseptic effect of food.

Use: Be used as food and the medicine aseptic , be used for antifreezing liquid of automobile , steel rust protection. As food additive be broad used for soy, vinegar, jam kind , sorbet , can etc.
